2 ribeye steaks (about 1.5 inches thick)

Salt and black pepper (to taste)

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 tablespoon Dijon mustard

2 teaspoons Worcestershire sauce

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Optional: 1 tablespoon butter (for extra flavor)

Instructions
 

Prepare the Steaks: Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper. Let the steaks come to room temperature while you prepare the garlic cream sauce.

    Make the Garlic Cream: In a medium saucepan over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Simmer the Cream: Pour in the heavy cream, stirring continuously. Add the Dijon mustard, Worcestershire sauce, and thyme. Let the mixture simmer for about 5-7 minutes, stirring occasionally until it thickens slightly. Taste and adjust seasoning if necessary. Set aside.

        Cook the Steaks: Heat a cast-iron skillet or grill pan over high heat. Add a little olive oil if necessary. Once the skillet is smoking hot, carefully place the seasoned steaks in the skillet. Sear for 4-5 minutes on one side until browned and crusty.

          Flip and Finish: Flip the steaks and cook for another 3-4 minutes for medium-rare, or longer to achieve your desired doneness. If using butter, add it to the skillet in the last minute of cooking and baste the steaks for additional flavor.

            Rest the Steaks: Remove the steaks from the skillet and let them rest on a plate for 5 minutes, tented lightly with aluminum foil.

              Serve: Slice the steaks against the grain and drizzle generously with the garlic cream sauce. Garnish with fresh parsley. Serve immediately with your choice of sides.
