Ingredients
  

1 lb (450g) sirloin steak, cut into bite-sized pieces

4 large eggs

2 tbsp olive oil, divided

1 tbsp butter

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp sea salt

Fresh parsley, chopped (for garnish)

Optional: hot sauce or steak sauce for serving

Instructions
 

Prepare the steak: In a mixing bowl, combine the steak pieces with minced garlic, smoked paprika, black pepper, and sea salt. Toss to coat evenly and let marinate for about 15 minutes.

    Cook the steak: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated steak bites in a single layer (you may need to do this in batches). Sear the bites until browned and cooked to your desired level of doneness, about 3-4 minutes for medium-rare. Remove from the skillet and set aside.

      Make the fluffy eggs: In a bowl, whisk together the eggs with a pinch of salt and pepper until well combined.

        Heat the second skillet: In the same skillet used for the steak, lower the heat to medium and add butter along with the remaining tablespoon of olive oil. Once the butter has melted and is frothy, pour in the whisked eggs. Allow them to cook undisturbed for about 1 minute until they begin to set around the edges.

          Scramble the eggs: Using a spatula, gently fold the eggs over themselves, lifting and turning until cooked to your desired fluffiness. This should take about 2-3 minutes. Remove from heat.

            Serve: On a plate, arrange the sizzling steak bites alongside the fluffy eggs. Garnish with chopped fresh parsley. Drizzle with hot sauce or steak sauce if desired.
