1 pound breakfast sausage, casings removed

8 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup diced bell peppers (red, green, and yellow)

1 small onion, diced

2 cups diced frozen hash browns (or fresh if preferred)

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it up into crumbles. Remove from heat and set aside.

      Sauté Vegetables: In the same skillet, add olive oil, then sauté the diced onion and bell peppers until softened, about 5 minutes. Add in the garlic powder, paprika, salt, and pepper, stirring to combine.

        Mix the Eggs: In a large mixing bowl, whisk together the eggs and milk until well blended. Stir in the cooked sausage, sautéed vegetables, and hash browns. Mix until evenly combined.

          Add the Cheese: Fold in the shredded cheddar cheese, reserving a small amount to sprinkle on top.

            Pour into Baking Dish: Grease a 9x13 inch baking dish, then pour the egg mixture into the dish, spreading it evenly. Sprinkle the reserved cheddar cheese on top.

              Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the top is golden brown.

                Let it Cool: After baking, allow the casserole to cool for about 5-10 minutes. This will help it set further and make it easier to slice.
