Ingredients

For the Steak Bites:

1 lb (450g) sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

1 tablespoon olive oil

For the Mashed Potatoes:

2 lbs (900g) Yukon Gold potatoes, peeled and diced

½ cup whole milk

4 tablespoons unsalted butter

Salt and pepper to taste

Optional: a pinch of garlic powder for added flavor

For the Green Beans:

1 lb (450g) fresh green beans, trimmed

2 tablespoons olive oil

1 teaspoon lemon juice

Salt and pepper to taste

Optional: 1 pinch of red pepper flakes for heat

Instructions

Prepare the Potatoes:

    - Place the diced potatoes in a large pot and cover with cold water. Add a generous pinch of salt and bring to a boil over medium-high heat. Cook until the potatoes are tender, about 15-20 minutes.

      Cook the Steak Bites:

        - While the potatoes are boiling, heat olive oil in a large skillet over medium-high heat.

          - Pat the steak cubes dry with a paper towel and season generously with salt and pepper.

            - Add the steak cubes to the skillet in a single layer. Sear for about 2-3 minutes on each side until browned and cooked to your desired doneness.

              - Reduce the heat to medium, add the butter, garlic, rosemary, and thyme. Toss the steak bites in the garlic butter until evenly coated, about 1-2 minutes. Remove from heat and cover to keep warm.

                Mash the Potatoes:

                  - Drain the potatoes and return them to the pot. Add the milk and butter, then mash until smooth and creamy. Season with salt, pepper, and garlic powder (if using) to taste. Keep warm.

                    Sauté the Green Beans:

                      - In another skillet, heat olive oil over medium heat. Add the green beans along with salt and pepper. Sauté for about 5-7 minutes until they are bright green and crisp-tender. Add lemon juice and red pepper flakes (if using) for extra flavor before removing from heat.

                        Assemble the Dish:

                          - Serve generous portions of creamy mashed potatoes topped with the sizzling garlic butter steak bites. Add the sautéed green beans on the side for a colorful, hearty meal.
