Ingredients

1 lb ground beef (80/20 blend for juiciness)

1 medium onion, thinly sliced

4 slices of rye bread (or your choice of bread)

4 slices of Swiss cheese

2 tbsp unsalted butter

1 tbsp Worcestershire sauce

Salt and pepper, to taste

Optional: Dill pickles, for serving

Instructions

Caramelize the Onions: In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and a pinch of salt. Cook for about 10-15 minutes, stirring occasionally, until onions are golden brown and caramelized. Set aside.

Shape the Patties: In a mixing bowl, combine the ground beef, Worcestershire sauce, salt, and pepper. Form the mixture into 2 equal-sized patties, ensuring they are slightly larger than the bread since they will shrink while cooking.

Cook the Patties: In the same skillet, add a little more butter if needed and cook the beef patties over medium-high heat for about 4-5 minutes on each side, or until they are cooked through and have a nice sear. In the last minute of cooking, place a slice of Swiss cheese on each patty and cover the skillet with a lid to melt the cheese.

Toast the Bread: While the cheese is melting, butter one side of each slice of bread. In a separate pan or on the same skillet (after removing the patties), place the buttered side of the bread down and toast them over medium heat until golden brown.

Assemble the Melt: On the unbuttered side of two slices of toasted bread, add a patty with melted cheese, top with caramelized onions, and then place another slice of toast on top (buttered side facing out). Repeat for the second sandwich.

Sizzle & Serve: Return the assembled patty melts to the skillet and cook for an additional 2-3 minutes on each side, pressing down gently with a spatula until the bread is crispy and golden-brown.

Enjoy: Cut the patty melts in half and serve warm, optionally with dill pickles on the side for an extra tangy crunch!
