8 slices of thick-cut bacon

2 large ripe tomatoes, sliced

4 slices of rustic sourdough bread

4 tablespoons of mayonnaise (or flavored aioli)

1 cup fresh arugula or spinach

1 teaspoon Dijon mustard

Salt and pepper to taste

1 tablespoon olive oil

Optional: sliced avocado, cheese (like cheddar or mozzarella)

Cook the Bacon: In a large skillet over medium heat, add the bacon slices. Cook until crispy, about 5-7 minutes per side. Drain on paper towels and set aside.
