8 lamb chops (about 1-inch thick)

3 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon Dijon mustard

Juice of 1 lemon

Marinate the Lamb Chops: In a large bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, Dijon mustard, lemon juice, salt, and pepper. Mix well to create a marinade.

    Add the Lamb Chops: Place the lamb chops in the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F / 204°C). If using a charcoal grill, prepare the coals until they are hot and glowing.

        Prepare the Grill Grates: Lightly oil the grill grates with a paper towel dipped in vegetable oil to prevent sticking.

          Grill the Lamb Chops: Remove the lamb chops from the marinade, allowing any excess marinade to drip off. Place the lamb chops on the grill. Cook for about 4-5 minutes on each side for medium-rare (internal temperature should reach 145°F / 63°C). Adjust cooking time for desired doneness.

            Rest the Chops: After grilling, remove the chops from the grill and let them rest for about 5 minutes. This allows the juices to redistribute and keeps the meat tender.
