Ingredients
  

1 lb (450g) ground beef (or turkey for a lighter option)

1 medium onion, diced

2 cups frozen mixed vegetables (peas, carrots, corn)

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 bag (32 oz) frozen tater tots

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional: 1/2 cup sour cream for added creaminess

Fresh parsley, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, brown the ground beef with the diced onion. Cook until the meat is no longer pink, about 5-7 minutes. Drain excess grease.

      Add Vegetables and Soup: Stir in the frozen mixed vegetables, cream of mushroom soup, garlic powder, onion powder, salt, and pepper. Mix until well combined, and heat for an additional 2-3 minutes until the vegetables are tender.

        Layer the Casserole: In a greased 9x13 inch baking dish, layer the meat mixture evenly on the bottom. If using sour cream, spread it now over the meat mixture.

          Cheese It Up: Sprinkle shredded cheddar cheese over the meat layer evenly.

            Tater Tot Layer: Arrange the frozen tater tots in a single layer on top of the cheese, covering fully.

              Bake: Place the casserole in the preheated oven and bake for 30-35 minutes or until the tater tots are golden brown and crispy.

                Serve and Garnish: Remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired, and serve hot.
