12 oz fresh or frozen cheese tortellini

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

4 cloves garlic, minced

1/2 cup cherry tomatoes, halved

1/4 tsp red pepper flakes (adjust to taste)

1/4 cup fresh parsley, chopped

Salt and pepper to taste

1 lemon, juiced and zested

Grated Parmesan cheese, for serving

Cook the Tortellini: Bring a large pot of salted water to boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Shrimp: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

      Cook the Shrimp: Add the shrimp to the skillet in a single layer. Season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Add Tomatoes: In the same skillet, add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften, stirring occasionally.

          Combine Ingredients: Return the shrimp to the skillet along with the cooked tortellini. Add lemon juice and zest, chopped parsley, and toss everything gently to combine. Cook for an additional 1-2 minutes to heat through.
