1 pound medium shrimp, peeled and deveined

1 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon lemon juice

1/2 teaspoon Old Bay seasoning (optional)

Salt and pepper, to taste

1/2 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup fresh dill, chopped

4 large buttery croissants

Lettuce leaves (e.g., romaine or butter lettuce)

Sliced avocado (optional)

Cherry tomatoes, halved (for garnish, optional)

Instructions
 

Cook the Shrimp: In a large pot of boiling salted water, add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove from heat, drain, and let cool. Once cooled, chop the shrimp into bite-sized pieces.

    Make the Dressing: In a large mixing bowl, combine the mayonnaise, Dijon mustard, lemon juice, and Old Bay seasoning if using. Mix well until smooth.

      Combine Ingredients: Add the chopped shrimp, celery, red onion, and dill to the dressing. Gently fold to combine, ensuring the shrimp is evenly coated. Season with salt and pepper to taste.

        Prep the Croissants: Slice the croissants in half lengthwise without cutting all the way through. If desired, lightly toast them in a toaster oven for added crunch.

          Assemble the Sandwich: Place a leafy layer of lettuce on the bottom half of each croissant. Generously spoon the shrimp salad over the lettuce. If desired, add sliced avocado on top for creaminess.

            Finish Up: Top with the other half of the croissant and press down gently. Optionally, garnish with cherry tomatoes on the side.

              Serve: Slice the sandwiches in half and enjoy immediately or chill for 30 minutes before serving for a refreshing treat.
