Shrimp Orzo in Creamy Wine Sauce

1 cup orzo pasta

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup dry white wine (such as Sauvignon Blanc)

1 cup heavy cream

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

1 teaspoon lemon zest

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook until the shrimp turn pink and opaque, about 2-3 minutes on each side. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Slowly pour in the white wine and bring it to a simmer. Let it reduce by half, about 3-5 minutes.

        Add Cream and Cheese: Reduce the heat to low and stir in the heavy cream, grated Parmesan cheese, and lemon zest. Mix well until the sauce is smooth and creamy.

          Combine Everything: Add the halved cherry tomatoes and cooked orzo to the skillet, stirring gently to coat everything in the creamy sauce. Return the shrimp to the skillet and cook for an additional 2-3 minutes until everything is heated through.

            Serve: Plate the shrimp orzo and garnish with fresh parsley. Serve warm and enjoy!
