9 lasagna noodles

1 lb (450g) shrimp, peeled and deveined

2 cups ricotta cheese

1 cup mozzarella cheese, shredded

1 cup Parmesan cheese, grated

3 cups spinach, fresh or frozen

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

4 tablespoons butter

4 tablespoons all-purpose flour

3 cups milk

Salt and pepper, to taste

1 teaspoon Italian seasoning

Fresh basil leaves for garnish

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the noodles: Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      Cook the shrimp: In a large skillet over medium heat, add a tablespoon of butter. Once melted, add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Add the shrimp, seasoning with salt, pepper, and Italian seasoning. Cook for 3-4 minutes or until the shrimp turn pink and are cooked through. Add the spinach, cooking until wilted if using fresh. Remove from heat and let cool.

        Make the white sauce: In another saucepan, melt the remaining butter over medium heat. Whisk in the flour, cooking for about 1-2 minutes to form a roux. Gradually whisk in the milk, cooking until the sauce thickens, about 5-7 minutes. Season with salt and pepper.

          Assemble the lasagna: In a 9x13 inch baking dish, start by spreading a thin layer of the white sauce on the bottom. Layer 3 lasagna noodles over the sauce. Spread half of the ricotta cheese evenly over the noodles, followed by half of the shrimp and spinach mixture, then a sprinkle of mozzarella and Parmesan cheese. Pour a layer of white sauce on top. Repeat this process with the next 3 noodles, the remaining ricotta, shrimp mixture, and a little more mozzarella and Parmesan, finishing with the last 3 noodles on top.

            Final layer: Pour the remaining white sauce over the top and thoroughly cover with the remaining mozzarella and Parmesan cheeses.

              Bake: Cover the dish with aluminum foil (to prevent burning) and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.

                Garnish and serve: Let the lasagna sit for about 10 minutes before slicing. Garnish with fresh basil leaves before serving.
