Ingredients
  

1 pound shrimp, peeled and deveined

1 pound smoked sausage, sliced (Andouille or kielbasa works well)

2 cups long-grain white rice

1 medium onion, diced

1 bell pepper, diced (any color)

2 celery stalks, chopped

4 cloves garlic, minced

4 cups chicken broth

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon cayenne pepper (optional for heat)

2 bay leaves

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Green onions, sliced (for garnish)

Instructions
 

In a large skillet or Dutch oven, heat olive oil over medium heat. Add the sliced sausage and sauté until browned, about 5-7 minutes.

    Add the diced onion, bell pepper, and celery to the skillet. Sauté until the vegetables are soft, about 5 minutes.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the rice to the skillet, stirring to coat the grains with the oil and blend with the sausage and vegetables.

          Pour in the chicken broth, and add the Cajun seasoning, thyme, paprika, cayenne pepper (if using), and bay leaves. Stir to combine.

            Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the liquid has been absorbed.

              Once the rice is cooked, gently fold in the shrimp. Cover again and cook for another 5 minutes, or until the shrimp are cooked through and pink.

                Remove from heat and discard the bay leaves. Fluff the rice with a fork and season with salt and pepper to taste.

                  Serve hot, garnished with fresh parsley and sliced green onions.
