2 cups cooked and shredded chicken breast

1 cup refried beans

1 cup cooked brown rice

1 cup corn kernels (fresh, canned, or frozen)

1 cup diced tomatoes (fresh or canned, drained)

1 cup shredded lettuce

1 cup shredded cheese (cheddar or a blend)

½ cup sour cream

½ cup guacamole

1 packet taco seasoning

4 large flour tortillas

Optional toppings: sliced jalapeños, cilantro, hot sauce

Instructions
 

Season the Chicken: In a mixing bowl, combine the shredded chicken with the taco seasoning. Mix well to ensure that the chicken is evenly coated. Set aside.

    Prepare the Bases: In a small saucepan, heat the refried beans over low heat until warm. In another pot, warm the brown rice if it's not already prepared.

      Assemble the Burritos:

        - Lay one flour tortilla flat on a clean surface.

          - Spread a layer of refried beans (about ¼ cup) across the center.

            - Add about ¼ cup of the seasoned chicken on top of the beans.

              - Next, layer ¼ cup of brown rice, followed by ¼ cup of corn and ¼ cup of diced tomatoes.

                - Sprinkle ¼ cup of shredded lettuce and a generous handful of shredded cheese over the top.

                  - Add 2 tablespoons of sour cream and a tablespoon of guacamole.

                    Wrap the Burrito: Fold in the sides of the tortilla, then roll it tightly from the bottom up to encase all the filling. Repeat the assembling and rolling process for the remaining tortillas and ingredients.

                      Grill the Burritos (optional): In a skillet over medium heat, place the burritos seam side down and grill for about 2-3 minutes until golden brown. Flip and grill the other side for another 2-3 minutes. This step adds a crispy texture.

                        Slice and Serve: Cut each burrito in half diagonally to showcase the colorful layers. Serve with additional guacamole, sour cream, and an array of optional toppings like sliced jalapeños, cilantro, or hot sauce.
