Ingredients

For the Grilled Fish:

4 fresh fish fillets (such as salmon, seabass, or tilapia)

2 tablespoons olive oil

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

For the Crispy Fries:

4 large russet potatoes, peeled and cut into hearty fries

2 tablespoons vegetable oil

1 teaspoon sea salt

1 teaspoon garlic powder

1 teaspoon paprika

Fresh herbs (like rosemary or thyme) for garnish

Instructions

Prepare the Marinade for the Fish:

    - In a bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, oregano, salt, and pepper.

      - Place the fish fillets in a shallow dish, pour the marinade over the top, and gently coat the fish. Cover and marinate in the refrigerator for 30 minutes.

        Prepare the Fries:

          - Preheat your oven to 425°F (220°C).

            - Rinse the potato sticks under cold water to remove excess starch, then pat them dry using paper towels.

              - In a large bowl, toss the fries with vegetable oil, sea salt, garlic powder, and paprika until evenly coated.

                - Spread the fries in a single layer on a baking sheet lined with parchment paper.

                  Bake the Fries:

                    - Bake the fries in the preheated oven for about 30-35 minutes, flipping halfway through, until they are golden brown and crispy.

                      Grill the Fish:

                        - Preheat a grill or grill pan over medium heat. Lightly grease the grill with oil.

                          - Remove the fish from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.

                            Assemble the Dish:

                              - Once the fries are crispy and the fish is grilled to perfection, remove both from heat.

                                - Serve the grilled fish on a plate with a side of crispy fries, and garnish with fresh parsley and lemon wedges for an extra burst of flavor.

                                  Enjoy Your Meal:

                                    - Dig into this coastal feast by enjoying the tenderness of the grilled fish paired beautifully with the crunch of the fries.
