Ingredients
  

1 lb mixed seafood (shrimp, scallops, and crab meat)

1 cup uncooked rice (white or brown)

2 cups seafood or chicken broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup shredded cheddar cheese

1 cup frozen peas

1 teaspoon Old Bay seasoning

1 teaspoon paprika

2 tablespoons olive oil

Salt and black pepper, to taste

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 4-5 minutes.

      Cook Rice: Stir in the rice, letting it toast for about 1-2 minutes for added flavor. Pour in the seafood broth and bring the mixture to a boil. Reduce heat to low and cover. Cook for 15 minutes, or until the rice is tender and the liquid is absorbed.

        Prepare Creamy Sauce: In a medium saucepan, combine the heavy cream, shredded cheddar cheese, Old Bay seasoning, paprika, and a pinch of salt and black pepper. Heat over medium-low until the cheese is melted and the sauce is smooth, stirring frequently.

          Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onions and garlic, mixed seafood, and frozen peas. Pour the creamy cheese sauce over the mixture and gently fold until everything is well coated.

            Transfer to Baking Dish: Pour the seafood casserole mixture into a greased 9x13 inch baking dish. Spread it out evenly.

              Bake: Cover the casserole with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.

                Garnish and Serve: Remove from the oven, let it cool for a few minutes, and garnish with fresh parsley if desired. Serve warm and enjoy!
