Ingredients
  

2 large sweet potatoes, peeled and diced

1 tablespoon olive oil

1 small onion, diced

2 garlic cloves, minced

1 bell pepper (any color), diced

2 cups fresh spinach, chopped

1/2 cup feta cheese, crumbled

1 teaspoon smoked paprika

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

Fresh parsley for garnish (optional)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften.

    Add the diced onion and bell pepper to the skillet. Continue to sauté for another 5-7 minutes, until the vegetables are tender and the sweet potatoes are fully cooked.

      Stir in the minced garlic, smoked paprika, red pepper flakes (if using), salt, and pepper. Cook for an additional 2 minutes until the garlic is fragrant.

        Fold in the chopped spinach and cook until just wilted, about 2-3 minutes.

          Sprinkle the crumbled feta cheese over the top and gently stir to combine. Allow the hash to heat through for another minute.

            Serve hot, garnished with fresh parsley if desired.
