1 large head of cabbage (green or savoy)

1 lb ground beef (or ground turkey for a lighter option)

1 cup uncooked rice (white or brown)

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 tablespoon Worcestershire sauce

2 teaspoons smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded cheese (cheddar or mozzarella)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Cabbage: Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage, and then submerge the whole cabbage in the boiling water. Blanch the cabbage for about 3-5 minutes until the outer leaves are softened. Remove the cabbage and let it cool slightly, then carefully peel off the leaves. Set aside.

    Cook the Rice: In a saucepan, cook the rice according to package instructions. Set aside when done.

      Make the Filling: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent (about 5 minutes). Add ground beef (or turkey) to the skillet, breaking it up with a spatula. Cook until browned. Stir in the cooked rice, Worcestershire sauce, smoked paprika, oregano, salt, and pepper. Mix well and remove from heat.

        Assemble the Rolls: Preheat your oven to 350°F (175°C). Take a cabbage leaf and spoon about 2-3 tablespoons of the meat mixture into the center of the leaf. Fold in the sides and roll up tightly, starting from the stem end. Place seam-side down in a baking dish. Repeat with remaining leaves and filling.

          Prepare the Sauce: In a bowl, combine the crushed tomatoes with a sprinkle of salt and pepper. Pour half of the sauce over the stuffed cabbage rolls in the baking dish. Sprinkle shredded cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, allowing the cheese to melt and lightly brown.

              Serve: Let the rolls cool for a few minutes before serving. Garnish with chopped fresh parsley if desired.
