2 lbs boneless, skinless chicken breasts

1 medium onion, chopped

4 cloves garlic, minced

2 cups chicken broth

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon black pepper

1 tablespoon olive oil

1/4 cup all-purpose flour

1 cup heavy cream

Salt to taste

4 large russet potatoes, peeled and cubed

1/2 cup milk

4 tablespoons butter

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken:

    - In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until they are translucent, about 5 minutes.

      - Stir in minced garlic and cook for an additional minute until fragrant.

        Cook the Chicken:

          - Add the chicken breasts, chicken broth, thyme, paprika, and black pepper to the skillet.

            - Bring to a simmer, cover, and cook for about 25-30 minutes or until the chicken is cooked through and tender.

              - Once done, remove the chicken from the skillet and shred it with two forks.

                Make the Gravy:

                  - In the same skillet with the remaining broth and seasonings, whisk in the flour to create a roux. Cook for 2-3 minutes to eliminate the raw flour taste.

                    - Slowly add the heavy cream, whisking constantly to avoid lumps. Let the gravy simmer an additional 5-7 minutes, until thickened. Adjust salt to taste.

                      Prepare the Mashed Potatoes:

                        - While the chicken and gravy are cooking, bring a large pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes.

                          - Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth. Adjust seasoning with salt as needed.
