8 large corn tortillas

2 cups cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (10 oz) green enchilada sauce

1 cup cooked and shredded chicken (optional)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp salt

1/4 tsp black pepper

Fresh cilantro, for garnish

Sliced jalapeños, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Filling: In a mixing bowl, combine softened cream cheese, 1/2 cup cheddar cheese, 1/2 cup Monterey Jack cheese, shredded chicken (if using), chopped onion, minced garlic, ground cumin, chili powder, salt, and black pepper. Mix until well combined.

      Assemble the Enchiladas: In a skillet, heat a small amount of oil over medium heat. Lightly fry each corn tortilla for about 10 seconds on each side, just until soft and pliable. Remove from heat.

        Fill the Tortillas: Place a generous spoonful of the cream cheese mixture in the center of each tortilla. Roll it up tightly and place seam-side down in a greased 9x13 inch baking dish.

          Add Sauce and Cheese: Once all the tortillas are filled and placed in the dish, pour the green enchilada sauce evenly over them. Sprinkle the remaining cheddar and Monterey Jack cheese on top.

            Bake: Bake in the preheated oven for 20-25 minutes, or until heated through and cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and let it cool slightly. Garnish with fresh cilantro and slices of jalapeños if desired. Serve warm.
