8 small tortillas (corn or flour)

1 cup cream cheese, softened

1 cup sour cream

1 can (10 oz) green enchilada sauce

1 cup shredded cooked chicken (optional)

1 cup shredded cheese (cheddar or Monterey Jack)

1/2 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh cilantro for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Filling: In a bowl, mix the softened cream cheese, sour cream, half of the shredded cheese, green onions, garlic powder, cumin, salt, and pepper. If using, fold in the shredded chicken until evenly combined.

      Assemble Enchiladas: Spread a thin layer of green enchilada sauce on the bottom of a baking dish. Take a tortilla, scoop a generous amount of the creamy filling into the center, and roll it up tightly. Place seam side down in the baking dish. Repeat with remaining tortillas.

        Add Sauce and Cheese: Once all enchiladas are in the dish, pour the remaining green enchilada sauce over the top. Sprinkle the remaining shredded cheese on top of the sauce.

          Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbling and slightly golden.

            Garnish and Serve: Remove from the oven, let cool for a few minutes, and garnish with fresh cilantro if desired. Serve warm and enjoy!
