1 pound breakfast sausage (mild or spicy, based on preference)

8 ounces cream cheese, softened

1 can (10 ounces) Rotel diced tomatoes with green chilies, drained

1 cup shredded sharp cheddar cheese

1½ cups almond flour (or regular flour)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt

1 large egg, lightly beaten

Chopped fresh parsley (optional, for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix the Meats: In a large bowl, crumble the breakfast sausage and add the softened cream cheese. Mix together until well combined.

      Incorporate the Rotel: Gently fold in the drained Rotel tomatoes, ensuring that they are evenly distributed throughout the mixture.

        Add Cheeses: Stir in the shredded sharp cheddar cheese until combined.

          Combine Dry Ingredients: In a separate bowl, mix the almond flour, garlic powder, onion powder, smoked paprika, black pepper, and salt. Gradually add this dry mixture to the sausage mixture.

            Bind with Egg: Pour in the beaten egg and mix until everything is thoroughly incorporated and forms a cohesive dough.

              Form the Balls: Using your hands, scoop out about 1 inch of dough and roll it into a ball. Place the sausage balls on the prepared baking sheet, leaving a little space between each one.
