Ingredients
  

1 lb ground beef

1 lb ground pork

1 large onion, finely chopped

2 cloves garlic, minced

1 cup fresh bread crumbs

2 large eggs

1/2 cup milk

1 tsp Worcestershire sauce

1 tsp Dijon mustard

1/2 tsp dried thyme

1/2 tsp smoked paprika

Salt and pepper to taste

1 cup Swiss cheese, grated

8 oz fondant (store-bought or homemade)

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Onions: In a skillet over medium heat, add a splash of olive oil and sauté the chopped onion until it's soft and caramelized, about 7-10 minutes. Add the minced garlic and cook for an additional 1-2 minutes. Remove from heat and let it cool slightly.

      Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef and ground pork. Add the sautéed onions and garlic, bread crumbs, eggs, milk, Worcestershire sauce, Dijon mustard, thyme, smoked paprika, salt, and pepper. Mix until everything is well incorporated but do not over-mix.

        Shape the Meatloaf: Press half of the meat mixture into a loaf shape in a lined baking dish. Create a well in the center of the meatloaf, filling it with the grated Swiss cheese. Top with the remaining meat mixture, sealing it well at the edges.

          Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C) and the meatloaf is firm.

            Prepare the Fondant Swiss Cheese: While the meatloaf is baking, roll out the fondant into a thin sheet large enough to cover the top of the meatloaf once it’s done. If you want, you can mold the fondant into decorative shapes or patterns.

              Glaze: Once the meatloaf is finished baking, remove it from the oven and let it rest for 10 minutes. You can optionally brush the top with a mixture of ketchup and brown sugar for extra flavor.

                Decorate: Carefully place the fondant Swiss cheese over the top of the meatloaf. Allow it to sit for a few minutes to soften slightly, then cut into slices and serve.

                  Garnish: Top with fresh parsley for a pop of color before serving.
