Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ teaspoon black pepper

1/3 cup cold unsalted butter, cubed

1 cup diced ham (smoked or honey-glazed)

1 cup shredded sharp cheddar cheese

1 tablespoon Dijon mustard

¾ cup buttermilk (or milk with 1 tablespoon lemon juice)

1 large egg (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and black pepper until well combined.

Incorporate Butter: Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

Add Ham and Cheese: Gently fold in the diced ham and shredded cheddar cheese until evenly distributed.

Combine Wet Ingredients: In a separate small bowl, mix the Dijon mustard with buttermilk until well combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix, as this can make the scones tough.

Shape the Dough: Turn the dough out onto a lightly floured surface. Pat it into a circle about 1 inch thick. Using a sharp knife or a bench scraper, cut the dough into 8 wedges, like a pizza.

Transfer to Baking Sheet: Place the scones on the prepared baking sheet, spacing them a bit apart.

Egg Wash: Beat the remaining egg and brush it over the tops of the scones for a shiny finish.

Bake: Bake in the preheated oven for 15-20 minutes or until golden brown and fragrant.

Cool and Serve: Allow the scones to cool slightly on the baking sheet, then transfer them to a wire rack. Enjoy them warm or at room temperature!
