Ingredients
  

1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 tsp cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

1/2 cup black olives, sliced

1/4 cup fresh cilantro, chopped

1 cup shredded cheese (cheddar or pepper jack)

2 packages of empanada dough discs (store-bought or homemade)

1 egg, beaten (for egg wash)

Olive oil for frying (or cooking spray for baking)

Instructions
 

Prepare the Beef Filling:

    - In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and diced red bell pepper, sautéing until the onion is translucent.

      - Add the minced garlic and cook for another minute until fragrant.

        - Crumble the ground beef into the skillet. Cook until browned and fully cooked, breaking it apart with a wooden spoon. Drain excess fat if necessary.

          - Stir in cumin, smoked paprika, chili powder, salt, and pepper. Add the sliced olives and chopped cilantro, mixing well. Remove from heat and let cool slightly.

            Assemble the Empanadas:

              - Take one empanada dough disc, and spoon about 1-2 tablespoons of the beef filling into the center.

                - Sprinkle a bit of shredded cheese over the meat mixture.

                  - Fold the dough over to create a half-moon shape. Press the edges together firmly to seal, crimping with a fork if desired to ensure they are well sealed.

                    - Repeat with remaining dough and filling.

                      Cook the Empanadas:

                        - For Frying: Heat oil in a deep frying pan over medium heat. Fry empanadas in batches for 3-4 minutes on each side or until golden brown. Drain on paper towels.

                          - For Baking: Preheat your oven to 375°F (190°C). Place empanadas on a baking sheet lined with parchment paper. Brush tops with beaten egg. Bake for 20-25 minutes or until golden brown.

                            Serve:

                              - Serve warm with your choice of dipping sauce like salsa, guacamole, or a tangy yogurt dip.
