Ingredients

1 lb flank steak (or sirloin, thinly sliced)

2 large onions, thinly sliced

2 tbsp olive oil

1 tbsp unsalted butter

4 cloves garlic, minced

1 cup beef broth

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

1 tsp balsamic vinegar

Salt and pepper, to taste

4 slices of crusty bread (like ciabatta or baguette)

1 cup shredded Gruyère cheese (or Swiss cheese)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring occasionally, for about 15-20 minutes until they are caramelized and golden brown. Add the minced garlic and cook for an additional 1-2 minutes. Season with salt, pepper, and thyme.

Deglaze the Pan: Pour in the beef broth and balsamic vinegar. Bring to a simmer and let it cook for another 5-10 minutes until slightly reduced. Remove from heat and set aside.

Cook the Steak: In another skillet, season the flank steak with salt and pepper. Cook over medium-high heat for about 3-4 minutes per side for medium-rare, or to your desired doneness. Remove from the heat and let it rest for a few minutes before slicing it against the grain into thin strips.

Assemble the Sandwiches: Preheat your oven's broiler. Toast the slices of bread lightly, then layer on the sliced steak, followed by a generous portion of the caramelized onions. Sprinkle the shredded Gruyère cheese on top.

Broil: Place the assembled sandwiches on a baking sheet and broil in the oven for about 2-3 minutes, or until the cheese is melted and bubbly.

Serve: Remove from the oven, garnish with fresh parsley, and serve hot. Enjoy your hearty delight with a side of fries or a fresh salad.
