2 cups cooked and shredded chicken breast

4 slices crispy bacon, chopped

1 cup cherry tomatoes, quartered

1/2 cup shredded lettuce (iceberg or romaine)

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

Salt and pepper to taste

4 slices of whole grain or sourdough bread

Optional: avocado slices for garnish

Instructions
 

In a large mixing bowl, combine the shredded chicken, chopped bacon, quartered cherry tomatoes, and shredded lettuce.

    In a smaller bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until smooth.

      Pour the dressing over the chicken mixture and toss until everything is well coated.

        Toast the slices of bread until golden brown (if desired).

          Spoon an abundant amount of the chicken salad onto two slices of bread.

            If using, add avocado slices on top of the chicken salad for an extra boost of flavor.

              Top with the remaining slices of bread, pressing down gently.

                Cut the sandwiches in half and serve immediately or chill in the refrigerator for a refreshing option.
