1.5 lbs beef sirloin or tenderloin, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

2 cups beef broth

1 cup white mushrooms, sliced

2 tablespoons Worcestershire sauce

2 tablespoons soy sauce

1 teaspoon dried thyme

1 teaspoon ground black pepper

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Searing the Beef: In a large skillet over medium-high heat, heat the olive oil. Add the beef cubes and season with salt and black pepper. Sear until browned on all sides, about 4-5 minutes. Remove the beef from the skillet and set aside.

    Cooking the Aromatics: In the same skillet, lower the heat to medium. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are tender, about 5 minutes.

      Building the Gravy: Add the beef broth, Worcestershire sauce, soy sauce, and dried thyme to the skillet. Stir well to combine, scraping up any browned bits from the bottom of the pan for extra flavor.

        Simmering the Beef: Return the seared beef to the skillet. Bring the mixture to a slow simmer. Cover and let it cook for about 30 minutes, allowing the flavors to meld and the beef to become tender.

          Thickening the Gravy: After 30 minutes, remove the lid and stir in the cornstarch mixture to thicken the gravy. Let it simmer for an additional 5-7 minutes until the gravy reaches your desired consistency. Adjust seasoning with salt and pepper to taste.
