Ingredients

2 cups cooked brisket, shredded

1 cup BBQ sauce (your favorite brand, preferably smoky)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 medium onion, thinly sliced

2 tablespoons olive oil

4 large slices of sourdough or Texas toast

1 tablespoon Worcestershire sauce

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the BBQ Brisket: In a medium saucepan over low heat, combine the shredded brisket with the BBQ sauce and Worcestershire sauce. Stir until well-coated and warmed through. Season with salt and pepper to taste.

Caramelize the Onions: In a skillet, heat the olive oil over medium heat. Add the sliced onions and sauté, stirring occasionally, until they are golden brown and caramelized (about 10 minutes). Season with salt to enhance the flavor.

Assemble the Melts: Preheat your oven to 400°F (200°C). On a baking sheet, place the slices of sourdough or Texas toast. Layer each slice with a generous amount of the BBQ brisket mixture, top with the caramelized onions, and finally sprinkle both cheddar and mozzarella cheese on top.

Melt and Toast: Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the bread are slightly crispy.

Serve: Remove from the oven and let cool for a minute before slicing in half. Garnish with freshly chopped parsley. Enjoy your savory BBQ brisket melts warm and gooey!
