Ingredients

4 wild-caught Alaskan King Salmon fillets (6 oz each)

2 tablespoons olive oil

1 tablespoon lemon juice

2 cloves garlic, minced

1 teaspoon fresh dill, chopped (or ½ teaspoon dried dill)

½ teaspoon sea salt

¼ teaspoon black pepper

Zest of 1 lemon

1 cup cherry tomatoes, halved

1 cup asparagus, trimmed and cut into 2-inch pieces

Fresh lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, fresh dill, sea salt, black pepper, and lemon zest.

Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure each fillet is well-coated. Let it marinate for at least 15 minutes to absorb the flavors.

Prepare the Vegetables: While the salmon is marinating, toss the cherry tomatoes and asparagus in a bowl with a drizzle of olive oil, salt, and pepper.

Arrange in Baking Dish: Place the marinated salmon fillets on a lightly greased baking dish or lined baking sheet. Arrange the seasoned cherry tomatoes and asparagus around the fillets.

Bake: Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

Serve: Remove from the oven and let it rest for a few minutes. Serve warm, garnished with fresh lemon wedges for an extra zesty kick. Enjoy this delightful dish alongside your favorite side!
