1 lb Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 can (14 oz) diced tomatoes, with juices

2 cups fresh spinach

1 package (9 oz) refrigerated cheese tortellini

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Grated Parmesan cheese for serving

Fresh parsley, chopped for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic and cook for an additional minute until fragrant.

      Remove the casing from the Italian sausage, then crumble it into the pot. Cook until browned, breaking it apart as it cooks (about 5-7 minutes).

        Pour in the chicken broth and diced tomatoes (with juices) into the pot, stirring to combine.

          Bring the mixture to a gentle simmer, then add basil and oregano. Season with salt and pepper to taste.

            After the soup has simmered for about 10 minutes, add the cheese tortellini to the broth. Cook according to package instructions, usually about 5-7 minutes until tender.

              During the last minute of cooking, stir in the fresh spinach until wilted.

                Taste the soup and adjust the seasoning if necessary.

                  Ladle the soup into bowls, sprinkling grated Parmesan cheese and chopped parsley on top for garnish.
