Sausage Tortellini Soup

Ingredients
  

1 pound Italian sausage (mild or spicy, your choice)

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, chopped

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for heat)

6 cups chicken or vegetable broth

1 can (14.5 oz) diced tomatoes, undrained

1 bag (9 oz) cheese tortellini (fresh or frozen)

2 cups fresh spinach

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh parsley for garnish

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon as it cooks. Brown the sausage until it’s fully cooked, about 5-7 minutes. Remove the sausage and set aside, leaving the drippings in the pot.

    In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-6 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional minute until fragrant.

      Sprinkle in the dried oregano, dried basil, and red pepper flakes (if using). Mix well to combine all the flavors, cooking for about 1 minute.

        Pour in the chicken or vegetable broth and add the can of diced tomatoes (including the juice). Bring the mixture to a gentle boil.

          Once boiling, add the cheese tortellini to the soup. Cook according to package instructions until the tortellini are al dente, usually around 3-5 minutes.

            Stir in the cooked sausage and fresh spinach until the spinach wilts, about 2-3 minutes. Season with salt and pepper to taste.

              Serve the soup hot in bowls, generously topped with grated Parmesan cheese and a sprinkle of fresh parsley for garnish. Enjoy!
