Ingredients
  

1 lb Italian sausage, casings removed

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

1 can (14 oz) diced tomatoes, undrained

6 cups chicken or vegetable broth

1 package (9 oz) refrigerated cheese tortellini

2 cups fresh spinach, chopped

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh basil leaves for garnish (optional)

Instructions
 

In a large pot, add the Italian sausage and cook over medium heat until browned, breaking it apart with a wooden spoon. This should take about 5-7 minutes. Drain excess fat if necessary.

    Add the diced onion, garlic, carrots, and celery to the pot with the sausage. Sauté for about 5-6 minutes, or until the vegetables are softened and the onion is translucent.

      Stir in the canned diced tomatoes (with juices), chicken broth, oregano, and basil. Bring to a gentle boil, then reduce the heat to a simmer. Let it cook for about 15 minutes, allowing the flavors to meld together.

        Add the cheese tortellini to the pot and cook according to the package instructions (usually about 3-5 minutes), until they are tender.

          Stir in the fresh spinach and adjust seasoning with salt and pepper to taste. Let the spinach wilt for about 2 minutes.

            Serve hot, garnished with grated Parmesan cheese and fresh basil leaves if desired.
