Ingredients

12 large jalapenos

1 pound spicy Italian sausage

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon salt

Fresh cilantro for garnish (optional)

Olive oil for drizzling

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Jalapenos: Slice the jalapenos in half lengthwise and remove the seeds and membranes (for less heat, remove more; leave some for extra kick).

Cook the Sausage: In a skillet over medium heat, cook the sausage, breaking it apart with a spatula until fully cooked and no longer pink, about 7-10 minutes. Drain any excess grease.

Mix the Filling: In a large bowl, combine the cooked sausage, cream cheese, cheddar cheese, mozzarella cheese, green onions, garlic powder, smoked paprika, black pepper, and salt. Mix until well combined.

Stuff the Jalapenos: Using a spoon or a piping bag, generously fill each jalapeno half with the sausage mixture.

Arrange and Drizzle: Place the stuffed jalapenos on the prepared baking sheet. Drizzle a little olive oil over the tops for added flavor and moisture.

Bake: Bake in the preheated oven for 20-25 minutes or until the jalapenos are tender and the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven, let cool for a few minutes, then garnish with fresh cilantro if desired. Serve warm as a delicious appetizer or snack.
