1 lb (450g) Italian sausage (mild or spicy, your choice)

4 large russet potatoes, thinly sliced

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup milk

1 cup shredded cheddar cheese

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika

1 teaspoon dried thyme

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Sausage: In a large skillet over medium heat, crumble and brown the Italian sausage until fully cooked and no longer pink, about 5-7 minutes. Remove from heat and drain excess fat if necessary.

      Sauté the Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes. Remove from heat.

        Prepare the Potato Layer: In a greased 9x13-inch casserole dish, layer half of the sliced potatoes on the bottom. Season with salt, pepper, and half of the paprika and thyme.

          Add the Sausage Mixture: Spread half of the cooked sausage over the potatoes, followed by half of the sautéed onion and garlic mixture.

            Layer the Cheese: Sprinkle half of the shredded cheddar cheese over the sausage layer.

              Repeat Layers: Add the remaining sliced potatoes on top, followed by the rest of the sausage, onion, garlic, and cheddar cheese.

                Prepare Cream Mixture: In a bowl, whisk together the heavy cream, milk, the rest of the paprika, thyme, and a pinch of salt and pepper. Pour this mixture evenly over the layered casserole.

                  Top with Parmesan: Sprinkle the grated Parmesan cheese over the top layer of the casserole.

                    Bake: Cover the casserole with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.

                      Cool and Serve: Let the casserole sit for about 10 minutes before serving. Garnish with freshly chopped parsley.
