6 medium tomatillos, husked and quartered

1 jalapeño, stemmed and halved

1 small red onion, quartered

2 cloves garlic, unpeeled

1/4 cup fresh cilantro leaves, packed

1 tablespoon lime juice

1 teaspoon ground cumin

Salt to taste

Instructions
 

Preheat the oven to 400°F (200°C).

    Place the quartered tomatillos, jalapeño halves, quartered red onion, and unpeeled garlic cloves on a baking sheet.

      Roast the vegetables in the preheated oven for about 15-20 minutes, until the tomatillos are soft and slightly charred.

        Once roasted, remove from the oven and let cool slightly.

          Squeeze the roasted garlic out of its skin into a blender. Add the roasted tomatillos, jalapeño, onion, fresh cilantro, lime juice, ground cumin, and salt to taste.

            Blend until you achieve a smooth, slightly chunky salsa consistency. Adjust the seasoning with more salt or lime juice if necessary.

              Transfer the salsa verde to a serving bowl and let it sit for at least 30 minutes to allow the flavors to meld.
