2 salmon fillets (about 6 oz each)

4 tablespoons of extra virgin olive oil

1 tablespoon fresh thyme, chopped

1 tablespoon fresh rosemary, chopped

2 garlic cloves, minced

1 lemon (zested and juiced)

Salt and pepper to taste

1 teaspoon red pepper flakes (optional)

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, combine the olive oil, thyme, rosemary, minced garlic, lemon zest, lemon juice, salt, pepper, and red pepper flakes (if using). Mix well to create an herb-infused marinade.

      Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, ensuring the fillets are well coated. Allow them to marinate for at least 20 minutes, or up to an hour in the refrigerator for more flavor.

        Prepare the Baking Sheet: Line a baking sheet with parchment paper. Arrange the halved cherry tomatoes around the edges of the baking sheet.

          Roast the Salmon: After marinating, place the salmon fillets in the center of the baking sheet. Drizzle any remaining marinade over the top. Roast in the preheated oven for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork. The tomatoes should also be blistered and juicy.
