4 bone-in pork chops (1-inch thick)

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

Salt and pepper to taste

Juice of 1 lemon

Fresh rosemary sprigs (for garnish)

Prepare the Pork Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.

    Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.

      Sear the Pork Chops: Place the pork chops in the skillet and sear for 4-5 minutes on each side, or until they develop a nice golden-brown crust. Use tongs to flip them carefully.

        Add Garlic and Rosemary: Once the chops are seared, lower the heat to medium and add the minced garlic and chopped rosemary to the pan. Stir for about 30 seconds until fragrant.

          Butter Basting: Add the butter to the skillet. Once melted, tilt the pan slightly and use a spoon to baste the pork chops with the melted butter, garlic, and rosemary mixture. Cook for an additional 2-3 minutes until the pork reaches an internal temperature of 145°F (63°C).

            Finish with Lemon Juice: Squeeze the lemon juice over the chops, letting the bright acidity brighten the flavors.

              Rest and Serve: Remove the pork chops from the skillet and let them rest for about 5 minutes. This allows the juices to redistribute. Garnish with fresh rosemary sprigs before serving.
