1.5 lbs baby potatoes, halved

1 lb fresh green beans, trimmed

3 tbsp olive oil

1 packet (1 oz) ranch seasoning mix

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/4 tsp black pepper

1/4 tsp salt (to taste)

Fresh parsley, chopped (for garnish)

Optional: Grated Parmesan cheese (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: In a large bowl, combine the halved baby potatoes, olive oil, ranch seasoning mix, garlic powder, onion powder, smoked paprika, black pepper, and salt. Toss until the potatoes are well coated.

      Roast the Potatoes: Spread the seasoned potatoes in a single layer on one side of the prepared baking sheet. Roast in the preheated oven for 20 minutes.

        Add Green Beans: After the potatoes have roasted for 20 minutes, remove the baking sheet from the oven. Add the trimmed green beans to the other side of the baking sheet, drizzle with a little olive oil (1 tbsp), and sprinkle with a pinch of salt and pepper. Toss to coat.

          Continue Roasting: Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the potatoes are golden and crispy and the green beans are tender-crisp.

            Garnish and Serve: Remove from the oven and let cool for a minute. Garnish with chopped parsley and, if desired, sprinkle some grated Parmesan cheese over the top before serving.
