2 pounds Yukon Gold potatoes, peeled and cubed

1 whole garlic bulb

4 tablespoons unsalted butter, softened

1 cup heavy cream

Salt, to taste

Freshly ground black pepper, to taste

1 tablespoon chopped fresh chives (for garnish)

1 tablespoon olive oil

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with a little olive oil, and wrap it in aluminum foil. Roast for 30-40 minutes until the cloves are soft and fragrant. Allow to cool slightly before squeezing the roasted garlic out of the skins into a bowl.

    Cook the Potatoes: Place the cubed potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil over high heat. Reduce to a simmer and cook until the potatoes are fork-tender, about 20 minutes.

      Drain and Mash: Drain the potatoes and return them to the pot. Add the softened butter and the roasted garlic cloves. Mash the potatoes with a potato masher or a ricer until they reach your desired creaminess.
