12 oz. rigatoni pasta

1 cup walnuts, finely chopped

1 cup mushrooms, finely chopped (cremini or button)

1 medium onion, diced

3 cloves garlic, minced

1 medium carrot, grated

1 can (15 oz.) crushed tomatoes

2 tbsp tomato paste

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and pepper, to taste

3 tbsp olive oil

Fresh parsley, chopped (for garnish)

Nutritional yeast (optional, for serving)

Instructions
 

Cook the Rigatoni: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Prepare the Meat Sauce: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

      Add Garlic and Vegetables: Stir in the minced garlic, grated carrot, and chopped mushrooms. Cook for another 5-7 minutes until the mushrooms are softened and have released their moisture.

        Incorporate the Walnuts: Add the finely chopped walnuts to the skillet, mixing well. Cook, stirring frequently, for approximately 3-4 minutes until the walnuts are fragrant.

          Add Tomatoes and Seasonings: Pour in the crushed tomatoes and tomato paste. Add oregano, basil, red pepper flakes, salt, and pepper. Stir well to combine. Let the sauce simmer for 10-15 minutes, allowing the flavors to meld. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

            Combine with Pasta: Add the cooked rigatoni to the skillet with the sauce, tossing to coat the pasta evenly with the walnut mushroom meat sauce.

              Serve: Plate the rigatoni and garnish with chopped fresh parsley and a sprinkle of nutritional yeast, if desired. Enjoy your hearty, nutritious meal!
