Ingredients

1 pre-made pie crust (or homemade, if preferred)

1 cup ricotta cheese

1 cup fresh spinach, chopped (or ½ cup frozen spinach, thawed and squeezed dry)

3 large eggs

1 cup heavy cream

½ cup grated Parmesan cheese

½ cup shredded mozzarella cheese

2 tablespoons fresh basil, chopped (or 1 tablespoon dried basil)

1/2 teaspoon garlic powder

Salt and pepper, to taste

1/4 teaspoon nutmeg (optional)

Olive oil spray (if using a pie dish)

Instructions

Preheat the oven to 375°F (190°C).

If using a homemade pie crust, roll it out and fit it into a 9-inch pie dish. If using a pre-made crust, lightly spray it with olive oil or cooking spray to prevent sticking.

In a large mixing bowl, combine the ricotta cheese, heavy cream, and eggs. Whisk until smooth and well combined.

Stir in the chopped spinach, Parmesan cheese, mozzarella cheese, basil, garlic powder, salt, pepper, and nutmeg (if using). Mix until all ingredients are evenly combined.

Pour the filling into the prepared pie crust, spreading it out evenly.

Bake in the preheated oven for 30-35 minutes, or until the quiche is set in the center and lightly golden on top.

Let the quiche cool for about 10 minutes before slicing. This will help it set further and make it easier to cut.

Serve warm or at room temperature, garnished with additional fresh basil if desired.
