Ingredients
  

1 lb corned beef, shredded

1 (14 oz) can sauerkraut, drained and rinsed

1 cup Swiss cheese, shredded

1 cup Russian or Thousand Island dressing

8 slices of rye bread, cubed

4 large eggs

2 cups milk

1 tsp caraway seeds (optional)

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

    In a large mixing bowl, combine the shredded corned beef, sauerkraut, and Swiss cheese. Mix well and set aside.

      In another bowl, whisk together the Russian or Thousand Island dressing, eggs, milk, salt, and pepper. Add in the caraway seeds, if using.

        Add the cubed rye bread to the egg mixture and let it soak for about 10 minutes, stirring occasionally until the bread is well-coated.

          Layer half of the soaked bread mixture on the bottom of the greased baking dish. Spread half of the corned beef mixture on top, then layer with the remaining bread mixture and top with the rest of the corned beef mixture.

            Pour the remaining egg and dressing mixture over the top, making sure the casserole is evenly saturated.

              Cover the dish with aluminum foil and bake for 30 minutes.

                Remove the foil and bake for an additional 15-20 minutes, until the top is golden brown and the casserole is set.

                  Let the casserole cool for a few minutes before slicing. Serve warm and garnish with fresh parsley if desired.
