4 red snapper fillets (about 6 oz each)

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper, to taste

1 small onion, finely chopped

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with juices

1 cup heavy cream

1 tablespoon Worcestershire sauce

1 tablespoon hot sauce (adjust to taste)

1 teaspoon Cajun seasoning

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Fish: Rinse the red snapper fillets under cold water and pat dry with paper towels. Season both sides with smoked paprika, salt, and pepper.

    Sear the Fish: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned fillets, cooking for about 3-4 minutes on each side until golden brown and cooked through. Remove the fillets from the skillet and set aside.

      Make the Creole Sauce: In the same skillet, reduce the heat to medium and add the chopped onion and bell pepper. Sauté for about 5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

        Add Tomatoes & Cream: Stir in the diced tomatoes (with juices), heavy cream, Worcestershire sauce, hot sauce, and Cajun seasoning. Bring the mixture to a gentle simmer and let it cook for about 5-7 minutes until slightly thickened.

          Combine: Gently return the seared red snapper fillets to the skillet, spooning the creamy sauce over the fish. Let it heat together for 2-3 minutes, ensuring the fish is heated through.
