2 cups fresh raspberries (plus extra for garnish)

1 cup granulated sugar

1 tablespoon lemon juice

1 cup whole milk

2 cups heavy cream

1 teaspoon vanilla extract

A pinch of salt

Optional: 1 tablespoon of raspberry liqueur for enhanced flavor

Prepare the Raspberries: In a medium bowl, combine the fresh raspberries and granulated sugar. Mash them lightly with a fork to release their juices. Add the lemon juice and stir until well combined. Let this mixture sit for about 30 minutes to allow the flavors to meld.

    Blend: After 30 minutes, pour the raspberry mixture into a blender or food processor. Blend until smooth. If you prefer a smoother texture, you can strain the mixture through a fine mesh sieve to remove the seeds.

      Combine with Cream: In a large bowl, whisk together the whole milk, heavy cream, vanilla extract, and a pinch of salt. Stir in the blended raspberry mixture until fully incorporated. If you’re using raspberry liqueur, add it at this stage for an extra kick.

        Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 2-3 hours, or until it’s completely chilled. This helps the ice cream churn more easily.

          Churn the Ice Cream: Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. This typically takes around 20-25 minutes.

            Freeze: Transfer the churned ice cream into an airtight container and smooth the top. Freeze for at least 4 hours, or until firm.
