1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tsp vanilla extract

2 ½ cups all-purpose flour

1 tsp baking powder

½ tsp salt

¾ cup raspberry jam (seedless for a smoother texture)

¼ cup fresh raspberries (optional, for garnishing)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

      Add Egg and Vanilla: Beat in the egg and vanilla extract until fully combined, scraping down the sides of the bowl as necessary.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

          Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. The dough should be soft but not sticky.

            Prepare Raspberry Mixture: In a small bowl, stir together the raspberry jam and fresh raspberries (if using) until just combined. You want small pieces of raspberries in the jam for texture.

              Swirl the Jam into Dough: Take about 1 cup of cookie dough and spread it out on a piece of parchment paper. Spread half of the raspberry jam mixture over the dough. Fold and gently swirl the jam into the dough without fully incorporating it, allowing for a marbled effect.

                Shape the Cookies: Using a tablespoon or cookie scoop, drop rounded balls of the dough onto the prepared baking sheets, about 2 inches apart. You can slightly flatten the balls if you prefer a thinner cookie.

                  Add Jam Topping: Take a small amount of the remaining raspberry jam and place a teaspoonful on top of each cookie. Use a toothpick or a skewer to create swirls on top.

                    Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look a little soft but will firm up as they cool.

                      Cool and Serve: Allow the cookies to cool on the baking sheets for about 5 minutes before transferring to a wire rack. Dust with powdered sugar if desired.
