1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1/2 cup whole milk

2 tablespoons fresh lemon juice

Zest of 1 lemon

2 teaspoons baking powder

½ teaspoon salt

1 cup fresh raspberries (plus extra for garnish)

For the Lemon Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

2 tablespoons fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

A pinch of salt

Preheat Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.

    Prepare Cupcake Batter:

      - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Add the eggs one at a time, beating well after each addition.

          - Mix in the lemon juice and lemon zest until combined.

            - In another bowl, whisk together the flour, baking powder, and salt.

              - Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Stir until just combined.

                - Gently fold in the fresh raspberries, being careful not to break them up too much.

                  Bake Cupcakes:

                    - Divide the batter evenly among the prepared cupcake liners.

                      - Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                        - Remove from the oven and allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

                          Make the Frosting:

                            - In a medium bowl, beat together the softened cream cheese and butter until creamy and smooth.

                              - Gradually add the powdered sugar, mixing on low until well combined.

                                - Add the lemon juice, lemon zest, vanilla extract, and salt. Beat until fluffy and smooth.

                                  Frost the Cupcakes:
