2/3 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 cup fresh raspberries (or frozen, thawed)

1 cup oats (old-fashioned)

1/2 cup sliced almonds (or your choice of nuts)

1/2 cup brown sugar (for crumble topping)

1/2 cup all-purpose flour (for crumble topping)

1/4 cup butter, melted (for crumble topping)

1/2 teaspoon cinnamon (for crumble topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).

      Add Eggs and Vanilla: Add in the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this to the wet ingredients, mixing just until combined.

          Fold in Oats and Raspberries: Gently fold in the oats and raspberries until evenly distributed throughout the dough.

            Prepare the Crumble Topping: In a small bowl, combine the crumble topping ingredients: brown sugar, flour, melted butter, and cinnamon. Mix with a fork until crumbly.

              Scoop the Cookies: Use a cookie scoop or tablespoon to drop rounded dough onto the prepared baking sheets, spacing them about 2 inches apart. Sprinkle the crumble topping generously over each cookie.
