Ingredients

2 pounds baby potatoes, halved

1 cup sour cream

1/2 cup mayonnaise

1 tablespoon ranch seasoning mix

1/4 cup finely chopped green onions

1/4 cup crispy bacon bits (cooked and crumbled)

1/2 cup shredded sharp cheddar cheese

2 tablespoons Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Potatoes: Place the halved baby potatoes in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes or until the potatoes are fork-tender. Drain and allow the potatoes to cool slightly.

Prepare the Dressing: In a medium bowl, mix together the sour cream, mayonnaise, ranch seasoning mix, and Dijon mustard. Stir until well combined.

Combine Ingredients: In a large mixing bowl, add the cooled potatoes, green onions, bacon bits, and shredded cheddar cheese. Pour the prepared dressing over the top and gently toss everything together until the potatoes are evenly coated.

Season to Taste: Add salt and pepper to taste. Feel free to add more ranch seasoning if you prefer a stronger flavor.

Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour before serving. This allows the flavors to meld beautifully.

Serve: Garnish with fresh parsley before serving. Enjoy your creamy ranch loaded potato salad as a delicious side dish at your next gathering!
