1 pound ground beef or turkey

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) chili beans (any variety)

1 can (14.5 oz) diced tomatoes with green chilies

2 cups elbow macaroni

4 cups beef broth or water

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

Chopped green onions for garnish

Cook the Meat: In a large pot, heat the olive oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it apart as it cooks, about 5-7 minutes. Drain excess fat if necessary.

    Sauté Aromatics: Add the diced onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.

      Combine Ingredients: Stir in the chili beans (with liquid), diced tomatoes (with juices), chili powder, cumin, and salt and pepper to taste. Mix well.

        Add Pasta: Pour in the elbow macaroni and beef broth (or water). Bring the mixture to a boil, then reduce heat to a simmer and cover. Cook for 8-10 minutes, or until the pasta is tender, stirring occasionally to prevent sticking.

          Final Touch: Once the pasta is cooked, remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy.
